The more I review this un-cook book, this tome of recipes for the raw table, I value its rich variation and texture. Juliano’s exuberant creativity is for vegetables, fruits, and herbs straight from the earth. The un-cook’s creativity without changing the quality of the food is a gift, and a way of life.
In truth, recipe books hold a treasure of ideas, awaiting the reader’s response. Now that summer has passed, autumn harvests can be the reward at our suppers.
